Couscous Salad

Lunch Bunch at Carolyn K-B's May 2011

Directions

2 boxes couscous (or cooked quinoa)
garlic powder to taste
1 can chickpeas, rinsed, drained & chopped
1/2 sweet onion
1 English cucumber, chopped
cherry tomatoes, quartered
Kalmata olives, seeded & finely chopped
1/4 c fresh parsley, chopped
3/4 c crumbled feta cheese
black pepper to taste
1/4 c EVOO (or Mexican lime EVOO)
2-3 limes, juiced
kosher salt

Cook couscous, cool, combine with remaining ingredients.
Sprinkle with a pinch of kosher salt to serve.

Virginia's Notes:
-I used garlic salt on each layer of vegetables as I chopped them.
-I increased the feta since I used 2 boxes of couscous.
-You could add shrimp or chicken to make a meal salad.
-Taste and add more lime and EVOO as you want.
